Red Beet Salad
Red beets, cilantro, carrots, onion and mayonnaise, a perfect side dish at your subsequent BBQ that goes wonderful with chicken, fish or steak. Should you haven’t tried beets yet, I promise you this is delicious. This was the recipe that got me to adore beets. Comparable to a potato salad with out all the points. Hubby liked it too to his surprise, even had seconds!
Purple Beet Salad

2 big beets, washed and stems cut off one cup carrots, peeled and cooked 1 tbsp cilantro, chopped one tbsp diced onion 2 tbsp light mayonnaise salt and pepper Boil beets in water till soft, about 50 minutes. Peel and reduce into modest 1/2″ cubes. Cook carrots until eventually tender and cut into bite measurement cubes. Combine diced onion, carrots, beets, mayonnaise, cilantro, salt and pepper.
